He continues with the egg theme and prepares his mother’s unique dish of Eggs Jeannette, A savory and very tasty Flan With Green Herbs follows, so simple to make when fresh herbs are plentiful. Jacques finishes with a delicious Spinach, Ham And Parmesan Soufflè, unusually presented in a rectangular glass dish.
