{"id":389,"date":"2011-09-11T20:46:47","date_gmt":"2011-09-12T03:46:47","guid":{"rendered":"http:\/\/blogs.kqed.org\/essentialpepin\/?p=389"},"modified":"2011-09-11T20:46:47","modified_gmt":"2011-09-12T03:46:47","slug":"cauliflower-au-gratin","status":"publish","type":"post","link":"https:\/\/ww2.kqed.org\/essentialpepin\/2011\/09\/11\/cauliflower-au-gratin\/","title":{"rendered":"Cauliflower Gratin"},"content":{"rendered":"<p>Episode 104: <a href=\"http:\/\/blogs.kqed.org\/essentialpepin\/?p=153\">Veg-In!<\/a><br \/>\nRecipe: <strong>Cauliflower Gratin<\/strong><\/p>\n<p>Made with a b\u00e9chamel sauce and finished with cheese, this cauliflower dish is one I remember well from my childhood.<\/p>\n<p><a href=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/cauliflower1000.jpg\" rel=\"lightbox\" title=\"Cauliflower Gratin\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/cauliflower560.jpg\" alt=\"Cauliflower Gratin\" title=\"Cauliflower au Gratin\" width=\"560\" height=\"375\" class=\"alignnone size-full wp-image-397\" srcset=\"https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/cauliflower560.jpg 560w, https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/cauliflower560-160x107.jpg 160w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><\/p>\n<p><strong>Serves 6<\/strong><\/p>\n<p>1 firm white cauliflower (about 1 1\/2 pounds)<br \/>\n3 tablespoons unsalted butter<br \/>\n3 tablespoons all-purpose flour<br \/>\n1 1\/2 cups milk<br \/>\n3\/4 cup heavy cream<br \/>\n1\/2 teaspoon salt<br \/>\n1\/4 teaspoon freshly ground white pepper<br \/>\n1\/8 teaspoon grated nutmeg<br \/>\n1\/2 cup grated Gruy\u00e8re or Emmenthaler cheese<br \/>\n2 tablespoons freshly grated Parmesan cheese<\/p>\n<p>Preheat the oven to 400 degrees.<\/p>\n<p>Remove the green leaves from the cauliflower, cut out the core, and separate cauliflower into florets. Drop the florets into a large stainless steel saucepan of boiling salted water, bring back to a boil, and cook, uncovered, for about 5 minutes. Drain and set aside.<\/p>\n<p>Melt the butter in a medium saucepan. Add the flour and cook over low heat for about 1 minute, stirring with a whisk; do not let the mixture brown. Add the milk and bring to a boil over medium heat, stirring constantly to prevent scorching, then simmer over low heat for 1 minute. Add the cream, salt, white pepper, and nutmeg and bring to a boil. Remove from the heat. <\/p>\n<p>Generously butter a gratin dish. Put the florets in the dish stem side down and coat with the white b\u00e9chamel. Sprinkle with the cheeses.
