{"id":335,"date":"2011-09-11T14:27:27","date_gmt":"2011-09-11T21:27:27","guid":{"rendered":"http:\/\/blogs.kqed.org\/essentialpepin\/?p=335"},"modified":"2011-09-11T14:27:27","modified_gmt":"2011-09-11T21:27:27","slug":"tartelettes-aux-fruit-panaches","status":"publish","type":"post","link":"https:\/\/ww2.kqed.org\/essentialpepin\/2011\/09\/11\/tartelettes-aux-fruit-panaches\/","title":{"rendered":"Tartelettes Aux Fruit Panaches"},"content":{"rendered":"<p>Episode 103: <a href=\"http:\/\/blogs.kqed.org\/essentialpepin\/?p=149\">Sweets For My Sweet<\/a><br \/>\nRecipe: <strong>Tartelettes Aux Fruit Panaches (Mixed Fruit Tartlets)<\/strong><\/p>\n<p>Thin disks of dough are baked with a topping of lightly sugared apricot and plum wedges until the pastry is crisp and the fruit soft.<\/p>\n<p><a href=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/tarlettes-aux-fruit1000.jpg\" rel=\"lightbox\" title=\"Tartelettes Aux Fruit Panaches\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/tarlettes-aux-fruit560.jpg\" alt=\"Tartelettes Aux Fruit Panaches\" title=\"Tartelettes Aux Fruit Panaches\" width=\"560\" height=\"375\" class=\"alignnone size-full wp-image-338\" srcset=\"https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/tarlettes-aux-fruit560.jpg 560w, https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/tarlettes-aux-fruit560-160x107.jpg 160w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>DOUGH<\/strong><br \/>\n2\/3 cup all-purpose flour<br \/>\n3 tablespoons cold unsalted butter, cut into 3 equal pieces<br \/>\n1 tablespoon canola oil<br \/>\n1\/2 teaspoon sugar<br \/>\n1\/8 teaspoon salt<br \/>\n1 tablespoon ice-cold water if needed<br \/>\n4 small ripe apricots (8\u201310 ounces), pitted and cut into 8\u201310 thin wedges<br \/>\n4 small ripe dark plums (8\u201310 ounces), pitted and cut into 8\u201310 thin wedges<br \/>\n2 tablespoons sugar<\/p>\n<p>Preheat the oven to 400 degrees.<\/p>\n<p><strong>FOR THE DOUGH:<\/strong> Put the flour, butter, oil, sugar, and salt in a food processor and process for about 10 seconds. Feel the dough; if it is soft enough to gather together into a ball, remove it from the bowl and form it into a ball. If it is still dry to the touch, add the tablespoon of ice water and process for another 5 or 6 seconds, then remove from the bowl and form into a ball. (The dough can be made ahead and refrigerated.) <\/p>\n<p>Lightly flour a work surface and roll the ball of dough into a very thin square, no more than 1\/8 inch thick. Using a round cutter with a 5-inch diameter, cut our 4 disks; or use a lid as a guide and cut out with a knife (gather up and reroll the trimmings if required). Carefully transfer the disks to a large cookie sheet lined with a nonstick baking mat, leaving a few inches of space between the disks.<\/p>\n<p>Arrange the apricots and plums, alternating them in a spiral on top of each dough disk. Sprinkle the fruit with the sugar. Bake for 30 to 35 minutes, until the fruit is soft and the dough nicely browned.<\/p>\n<p>Some of the juice from the fruit will have leaked out onto the cookie sheet. Before it hardens and makes the disks stick to the sheet, lift the tarts with a broad spatula and transfer them to a cooling rack or platter.
