With its green herb puree, this is ideal served with fish.<\/p>\n<p><a title=\"Green Couscous\" href=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/green-couscous1000.jpg\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-263\" title=\"Green Couscous\" src=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/green-couscous560.jpg\" alt=\"Green Couscous\" width=\"560\" height=\"375\" srcset=\"https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/green-couscous560.jpg 560w, https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/green-couscous560-160x107.jpg 160w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p>1 cup loosely packed fresh herb leaves (a mixture of chives, parsley, tarragon, and basil)<br \/>\n2 garlic cloves<br \/>\n3\/4 cup boiling water<br \/>\n1 tablespoon unsalted butter<br \/>\n1 cup instant couscous<br \/>\n1\/2 teaspoon salt<\/p>\n<p>Process the herbs, garlic, and 1\/4 cup of the boiling water in a blender or mini-chop for about 30 seconds, or until smooth.<\/p>\n<p>Melt the butter in a saucepan. Add the couscous and salt and mix well to coat the couscous with the butter. Add the herb puree and the remaining 1\/2 cup boiling water and mix well. Cover and let stand off the heat for 10 minutes.<\/p>\n<p>Fluff the couscous with a fork and serve.<\/p>\n<p><em>Copyright \u00a9 2011 by Jacques P\u00e9pin.
