Although tuiles are not usually flavored with orange zest, this is a nice variation.<\/p>\n<p><a href=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/tuiles-a-lorange1000.jpg\" title=\"Crispy Tuiles a LOrange\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/tuiles-a-lorange560.jpg\" alt=\"Crispy Tuiles a LOrange\" title=\"Crispy Tuiles a LOrange\" width=\"560\" height=\"375\" class=\"alignnone size-full wp-image-1398\" srcset=\"https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/tuiles-a-lorange560.jpg 560w, https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/tuiles-a-lorange560-160x107.jpg 160w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><\/p>\n<p><strong>Makes about 20 cookies<\/strong><\/p>\n<p>1\/2 cup sugar<br \/>\n1\/4 teaspoon pure vanilla extract<br \/>\n2 large egg whites<br \/>\n1\/3 cup all-purpose flour<br \/>\n4 tablespoon (1\/2 stick) unsalted butter, melted<br \/>\n1\/2 cup sliced almonds<br \/>\n2 teaspoons grated orange rind<\/p>\n<p>Preheat the oven to 400 degrees. Line a baking sheet with a nonstick baking mat and set aside.<\/p>\n<p>Combine the sugar, vanilla, and egg whites in a bowl and beat with a whisk for a few seconds until foaming. Add the flour, butter, almonds, and orange rind, mixing them in well. (The batter will be liquid.)<\/p>\n<p>Drop about 1 1\/2 tablespoons of batter for each cookie onto the prepared pan, leaving at least 4 inches between the mounds to allow for spreading. Bake for 10 to 12 minutes, until lightly browned. <\/p>\n<p>Let the cookies &#8220;settle&#8221; for a couple of minutes and then, while they are still hot, lift them off the baking sheet and bend each cookie over a rolling pin or place it into a baguette mold so it takes on the shape of a curved roof tile. Allow them to cool long enough so they maintain their shape when removed. Let cool, and store in an airtight tin.<\/p>\n<p><em>Copyright \u00a9 2011 by Jacques P\u00e9pin.
