It\u2019s often served as a late-night dish. When I was a young man, I often made it with my friends at two or three A.M. after returning home from a night of dancing. The soup is strained through a food mill and put in a large tureen or casserole that goes into the oven. Once it is baked, egg yolks and port are mixed together in front of your guests and poured into a hole made in the center of the cheese crust. Then the whole soup is mixed together \u2014 both the crust and the softer insides \u2014 and served in hot bowls. It looks thick and messy, but it is delicious.<\/p>\n<p><a href=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/onion-soup800.jpg\" title=\"Onion Soup Lyonnaise-Style\" rel=\"lightbox\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/ww2.kqed.org\/essentialpepin\/wp-content\/uploads\/sites\/56\/2011\/09\/onion-soup400.jpg\" alt=\"Onion Soup Lyonnaise-Style\" title=\"Onion Soup Lyonnaise-Style\" width=\"400\" height=\"598\" class=\"alignnone size-full wp-image-1242\" srcset=\"https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/onion-soup400.jpg 400w, https:\/\/ww2.kqed.org\/app\/uploads\/sites\/56\/2011\/09\/onion-soup400-160x239.jpg 160w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><\/p>\n<p><strong>Serves 6 to 8<\/strong><\/p>\n<p>15\u201320 thin slices (1\/4-inch-thick) baguette<br \/>\n3 tablespoons unsalted butter<br \/>\n2 medium onions, thinly sliced (about 3 cups)<br \/>\n6 cups homemade chicken stock (<strong>see recipe below<\/strong>) or low-salt canned chicken broth<br \/>\n1\/2 teaspoon salt, or to taste<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n2 cups grated Gruy\u00e8re or Emmenthaler cheese<br \/>\n2 large egg yolks<br \/>\n\u00bd cup sweet port<\/p>\n<p>Preheat the oven to 400 degrees.<\/p>\n<p>Arrange the bread slices on a cookie sheet and bake for 8 to 10 minutes, until browned. Remove from the oven and set aside. (Leave the oven on.) Melt the butter in a large saucepan. Add the onions and saut\u00e9 for 15 minutes, or until dark brown.<\/p>\n<p>Add the stock, salt, and pepper. Bring to a boil and cook for 20 minutes. Push the soup through a food mill.<\/p>\n<p>Arrange one third of the toasted bread in the bottom of an ovenproof soup tureen or large casserole. Sprinkle with some of the cheese, then add the remaining bread and more cheese, saving enough to sprinkle over the top of the soup. Fill the tureen with the hot soup, sprinkle the reserved cheese on top, and place on a cookie sheet. Bake for approximately 35 minutes, or until a golden crust forms on top.<\/p>\n<p>At serving time, bring the soup to the table. Combine the yolks with the port in a deep soup plate and whip with a fork. With a ladle, make a hole in the top of the gratin\u00e9e, pour in the wine mixture, and fold into the soup with the ladle. Stir everything together and serve.<\/p>\n<hr \/>\n<p><strong>CHICKEN STOCK<\/strong><\/p>\n<p><strong>Makes 3 quarts<\/strong><\/p>\n<p>It takes very little work to make your own stock; mostly it is a matter of being at home for the several hours it takes to cook. A flavorful money saver that is practically fat- and salt-free, homemade stock can be frozen in small quantities and used as needed.<\/p>\n<p>Chicken backs and necks are available at most supermarkets. If you don\u2019t see them, ask the butcher to set aside some for you. I also make stock from the bones of roasted chicken or turkey.<\/p>\n<p>4 pounds chicken bones (necks, backs, wings, etc.), skinless or with as little skin as possible<br \/>\n6 quarts cold water<br \/>\n1 large onion (about 8 ounces), quartered<br \/>\n1 tablespoon herbes de Provence<br \/>\n12 whole cloves<br \/>\n4 bay leaves<br \/>\n1 tablespoon dark soy sauce (optional)<\/p>\n<p>Combine the bones and water in a large stockpot and bring to a boil over high heat. Reduce the heat and boil gently for 30 minutes. Most of the fat and impurities will rise to the surface; skim off as much of them as you can and discard them.<\/p>\n<p>Add the onion, herbes de Provence, cloves, bay leaves, and soy sauce, if using, return to a boil, and boil gently for 2 1\/2 hours. Strain the stock through a fine strainer or a colander lined with dampened paper towels. Allow to cool.<\/p>\n<p>Remove the surface fat and refrigerate the stock for up to 5 days, or pour into containers and freeze.<\/p>\n<p><em>Copyright \u00a9 2011 by Jacques P\u00e9pin.
