"Gloria loves cherry pie and the classic French clafoutis, and so do I, but when time is short, I’m happy with this simple cherry crumble. Serve it warm with ice cream, crème fraîche, or sour cream. I often buy frozen pitted cherries for this dessert." --Jacques Pépin

Recipe: Cherry Crumble

Serves 4 to 6

    Ingredients:
  • 1 pound dark sweet cherries, pitted, or frozen pitted sweet cherries
  • 2 tablespoons sugar Dough
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 6 tablespoons unsalted butter, softened
  • Ice cream, crème fraîche, or sour cream, for serving
    Instructions:
  1. Preheat the oven to 400 degrees.
  2. Combine the cherries and sugar in a bowl and mix well, then transfer to a 4- to 5-cup gratin dish.
    For the dough
  1. Mix the ingredients by hand or in a food processor just until the mixture comes together.
  2. Crumble the dough over the cherries.
  3. Bake the crumble for 45 minutes. Serve warm, topping each portion with a heaping spoonful of ice cream, crème fraîche, or sour cream.
